Togue Brawn has a scallop obsession. Togue Brawn prepares a makeshift picnic on top of a slab of granite while perched on cobblestones between two piers. Brawn founded her business, Downeast Dayboat, twelve years ago with the goal of making dayboat-harvested Maine scallops more widely available. As Brawn notes, the state’s close-to-shore scallop populations give scallops gathered in different regions their unique regional “merroir”; some taste creamy, others sweet, and yet others have sharp algae bite.
