The History Behind the Real General Tso and His Famous Chicken Dish | Military.com

General Tso’s chicken can be found on nearly every Chinese restaurant menu in America. However, a fairer description of the dish would be “Chinese inspired.” It was also not invented by a Chinese general, but rather named after him by the chef who created it. 

Peng named the chicken after General Tso Tsung-t’ang of the Hunanese Qing Dynasty. Tso’s only resemblance to his famous chicken dish is that he was born in Hunan Province. Chef Peng created the now-famous dish using traditional Hunan tastes. Peng informed author Fuchsia Dunlop for her 2007 book “Revolutionary Chinese Cookbook” that traditional Hunan flavors are heavy, sour, spicy, and salty.
