Polyphenols are naturally occurring compounds found in fruits, vegetables, cereals, and beverages like coffee and green tea that protect the body against oxidative stress and associated pathologies. The Green Mediterranean diet is distinct from the traditional Mediterranean diet because of its higher amounts of dietary polyphenols and lower amounts of red or processed meat. Researchers found that the Green Mediterranean diet substantially regressed proximal aortic stiffness, a marker of vascular aging and increased cardiovascular risk, by 15%.
