There are several theories as to why rates of chronic disease in industrialized countries have risen significantly including over consumption of saturated fats and sugars. One possible culprit that receives little attention is the rise of industrial seed oils. Canola, vegetable, soybean, all have been marketed as healthier cooking alternatives than animal fat-based substances but there is plenty of research showing the adverse effects they can produce. In the late 1940s the fledgling American Heart Association received a donation from Proctor & Gamble, the makers of Crisco. They quickly became the highest profile national organization dedicated to cardiac health and they also endorsed “vegetable oils” as healthier than animal based fats. Another doctor at the time linked cholesterol and saturated fat intake to heart disease and although this was accepted at the time, his conclusion was proven to be based on faulty research.
